Gajar Halwa Phirni 

Chef Saransh Goila shared a Gajar Halwa Phirni recipe that brings together two of the best desi desserts and here’s how you can make it at home. 

Ingredients

1 kg grated red carrot 2l full-fat milk Sugar Ghee 1/2 tsp Cardamom powder ½ cup soaked basmati rice 1 tsp kewra water

Prepare Gajar Halwa

1. Begin by cooking grated carrots in a kadhai till all the moisture dries up. 2. Then, add 1 litre of milk to it and cook till it is reduced. 

Follow These Steps 

3. Then, add 1/4 cup + 2 tbsp sugar, 2 tbsp ghee, and ½ tsp cardamom powder. 4. Mix well and cook for a few minutes. 

For The Phirni

5. Now, blend the soaked basmati rice till you get a coarse paste consistency. 6. Then, add 1l milk in a kadhai along with the paste and cook till it thickens. 

Bring It Together 

7. Next, add ¼ cup sugar, 1 tsp kewra water, and mix well. 8. After that, add 1 cup of the prepared gajar ka halwa and some chopped nuts. 9. Mix well. 

Let It Set

10. Set the phirni in kulhads and refrigerate for a few hours.
