Dal chawal is the perfect hearty meal we crave after a long day. Chef Kunal Kapur's simple dal tadka is perfect to cook during such busy schedules.

• 1/2 cup tur dal • 1/4 cup masoor dal • 1/4 cup chana dal • 4 cups water • 1 tsp turmeric powder • 1½ onions • 5 garlic cloves • 3 green chillies • 3 tsp chopped ginger • 2 tbsp ghee • 2 dry red chillies • 1/2 tsp asafoetida • 1 tsp cumin • 1 tbsp chopped garlic • 1 tsp red chilli powder • 1 tbsp sambar masala • 2 tomatoes • Salt • A bunch of spinach • 1 lemon wedge • A handful of chopped coriander leaves • 2 tsp ghee

• Start by adding water, washed dal, 1/2 tsp turmeric powder, half a chopped onion, five garlic cloves, a green chilli, and 1 tsp chopped ginger to a pressure cooker and cook till dal softens and melts.

• Next, heat ghee in a pan and saute dry red chillies, asafoetida, cumin, 1 tbsp chopped garlic, chopped onion, chopped green chilli, and 2 tsp chopped ginger.

• After a couple of minutes, add 1/2 tsp turmeric powder, red chilli powder, and sambar masala and cook for some time. In the next step, add chopped tomatoes and salt and cook for a few more minutes.

• Add freshly chopped spinach and cook well for a minute. Transfer the spices to the pressure cooker and cook for five minutes.

• Drizzle lemon juice and add chopped coriander leaves and ghee. Stir gently.

Homemade dal tadka is ready. Serve it with steamed rice and enjoy.
