• 2 tsp oil • 1/2 tsp coriander seeds • A few black peppercorns • 1/2 tsp cumin • 3 garlic cloves • 1 inch ginger • 1 inch fresh turmeric • 1 tbsp coriander stems • Vegetables of choice (carrot, broccoli, mushroom, pumpkin & more) • 1 lemon • A handful of fried onions • 2 tbsp sambar masala • 1 cup vegetable stock • 1 cup coconut milk • Salt • 1 tsp sugar • Wheat noodles • Spring onion greens

• Heat oil in a pan and saute coriander seeds, black peppercorns, cumin, crushed garlic cloves, julienne ginger, chopped turmeric, and chopped coriander stems.

• Add your favourite vegetables such as broccoli, carrot, mushroom, pumpkin, and more.

• Add lemon zest and mix well. Next, add fried onions, sambar masala, vegetable stock, and coconut milk.

• Cook for a couple of minutes and sprinkle salt and sugar. Bring everything to a boil.

• Once done, add boiled wheat noodles to a serving plate and pour this flavourful coconut curry loaded with vegetables.
