Rafia Mazhar has a recipe for Khalifa Nankhatai, a biscuit famous in Lahore. It's buttery, sweet and delicious.

3/4 cup of melted ghee 3/4 cup of caster sugar 1 pinch of salt 1/4 tsp of baking soda 1 tsp of baking powder 2 tbsp of gram flour (besan) 1.5 cup of flour (Maida) 1/2 tsp of Elaichi powder 3/4 cup of chopped roasted almonds 1 egg yolk or milk

First, melt and transfer the ghee to a mixing bowl. And freeze it for 15 minutes till it solidifies.

Then, whisk the ghee till it turns white and fluffy and doubles in volume. Add the sugar and mix well.

Then, sift in all the dry ingredients and rub the flour in the ghee till it forms crumbs. Add the almonds to it.

Then, using your hands shape the dough into small discs. You can use a cookie cutter as well. Then, refrigerate it for 10 minutes.

Brush the biscuits with egg yolk or milk and bake them at 180°C for 15 to 20 minutes. Bake them till they turn golden brown. Your Khalifa Nankhatais are ready!
