Chef Guntas Sethi's recipe for paneer thecha shawarma is our favourite. Make fresh thecha paneer at home and cook lip-smacking shawarma easily.

• 1 tsp oil • 5-6 green chillies • 4-5 garlic cloves • 1 tsp jeera • Coriander stems • 2 tsp coriander • 2 tbsp peanuts • 1 tbsp pink salt • 1 L milk • 1 tbsp vinegar • Pita bread • Hummus • Garlic sauce • Pickled vegetables • French fries

• Start by sauteing green chillies, garlic, jeera, chopped coriander stems, coriander, peanuts, and pink salt.

• Grind these sauteed flavourful ingredients into a coarse mixture.

• Next, heat milk and add freshly made thecha to it. Add vinegar as well. Let it curdle for some time.

• Once done, wash the savoury preparation and keep it aside to set well.

• Cut homemade thecha paneer and grill them until they turn golden brown.

• In the last step, layer hummus, garlic sauce, pickled carrot, pickled onion, grilled paneer, and French fries on pita bread.
