Rildok is a soup from Nepal where potatoes are mashed into a pulp. Ashmi Upadhyaya shared a recipe for Rildok, a Nepali potato soup devoured by Sherpas.

First, boil the red potatoes till they are tender. Peel them and let them cool down.

Meanwhile, make garlic paste by pounding garlic cloves, schezwan peppercorns and red chillies together and keep them aside as well.

Then, mash the red potatoes using a mortar and pestle till it has a cheese-like consistency or till it dissolves in soup.

On a pan with oil, saute onions, the garlic mixture, tomatoes and green onions with salt and turmeric. Add water and let it simmer for 3 to 4 minutes.

Wet your hands in water and carefully form small balls from the mashed potatoes. Drop the potato balls into the soup.
