South cookery has a recipe for Crispy Green Moong Dal Vadais which go beautifully with filter coffee.

1 cup of green moong dal 1 inch of ginger piece 4 garlic cloves 1/2 an inch of cinnamon 2 tsp of fennel seeds Salt to taste 2 to 3 tbsp of water Coriander leaves (finely chopped) 1 medium sized onion (finely chopped) 4 green chillies (finely chopped) 1 tsp of Chili flakes Curry leaves (finely chopped) 2 tbsp of rice flour

Soak green moong dal in water for 3 hours. Later, keep 1/4 cup of it separately.

Grind the rest of the moong dal in a blender with ginger, garlic, fennel, seeds, salt, cinnamon and little water.

Mix the coarsely ground moong dal paste with the moong dal kept aside. Add the rest of the ingredients and make a batter.

Shape them into vadais with your hands.
